Edam

This cheese matures for six to eight weeks. Edam has an elastic, golden yellow body that has a different consistency to that of young factory Gouda. In the best case scenario, Edam has a slightly tangy aroma and a pure, mild, light, acidic flavour with subtle salty note in the aftertaste.
