Emmental is a hard cheese that originates from Switzerland and that is now produced around the world in different variants. It contains 45 percent fat in the dry matter. The large holes and the aroma are typical features of Emmental. Both occur during fermentation due to propionic acid bacteria that stick
to the milk's fat content and that release carbon dioxide and propionic acid. The shape of the holes can indicate the quality of maturity. If they are not round, but extremely oval and very small or large, this can indicate that the maturing process was not completed correctly; these types of cheeses often taste bitter or unpleasant in some other way.
